Ingredients
¼ cup mayonnaise
4 teaspoons Honey Cup Uniquely Sharp Mustard
4 teaspoons Grey Poupon Country Dijon Mustard
4 teaspoons Maille Whole Grain Old Style Mustard
1 tablespoon honey
¼ teaspoon cayenne pepper
1 teaspoon kosher salt, or to taste
½ teaspoon freshly ground black pepper
2 pounds Scottish salmon fillet, skin-on or skinless, whole or cut into portions
Directions
Prepare the Oven
Preheat the broiler and position the oven rack about 6 inches below the broiler element.
Make the Honey-Mustard Glaze
In a small mixing bowl, whisk together the mayonnaise, Honey Cup mustard, Dijon mustard, whole grain mustard, honey, and cayenne pepper until smooth and fully combined.
Season the Salmon
Pat the salmon dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper.
Coat the Salmon
Line a rimmed baking sheet with aluminum foil for easy cleanup. Place the salmon on the prepared baking sheet.
Spread a thin, even layer of the honey-mustard glaze over the top and sides of the salmon, ensuring the entire surface is coated.
Broil the Salmon
Place the baking sheet under the broiler and cook for 5 to 15 minutes, depending on the thickness of the fillet. The glaze should become golden brown and slightly caramelized.
Cook until the internal temperature reaches 115°F for medium-rare or 125°F for medium. Use an instant-read thermometer to check for doneness.
If the salmon browns before the center is fully cooked, turn off the broiler and switch the oven to 425°F. Continue baking for an additional 1 to 2 minutes, or until the desired internal temperature is reached.
Serve
Carefully transfer the salmon to a serving platter or individual plates. Serve immediately with roasted vegetables, rice, salad, or your favorite gluten-free side dishes.

Notes
This recipe works beautifully with either a large salmon fillet or individually portioned salmon pieces.
Both skin-on and skinless salmon produce excellent results.
Adjust the cayenne pepper to increase or decrease the heat level according to your preference.
For the best texture and flavor, avoid overcooking the salmon. The fish will continue cooking slightly after being removed from the oven.
Scottish salmon is prized for its rich flavor, buttery texture, and high omega-3 content, making it an excellent choice for this honey-mustard preparation.
Make Ahead and Storage
The honey-mustard glaze can be prepared up to 7 days in advance and stored in an airtight container in the refrigerator.
Store leftover cooked salmon in an airtight container in the refrigerator for up to 3 days.
To reheat, warm gently in a 300°F oven until heated through to help maintain moisture and texture.
