Saffron Risotto Recipe (Risotto alla Milanese)

Ingredients

6 cups low-sodium chicken broth or vegetable stock
3 tablespoons extra-virgin olive oil
1½ cups Arborio rice
2 medium shallots, finely minced
1 cup dry white wine
½ teaspoon saffron threads
¾ teaspoon fine sea salt
¼ teaspoon black pepper
2 cups finely grated Parmigiano-Reggiano cheese, plus additional for serving
2 tablespoons unsalted butter

Preparation

Step 1: Warm the Broth

Pour the chicken broth or vegetable stock into a saucepan and keep it over low heat. The broth should remain hot throughout the cooking process, which helps the rice cook evenly and develop its signature creamy texture.

Step 2: Sauté the Shallots and Rice

Heat the olive oil in a large saucepan or Dutch oven over medium heat. Add the minced shallots and cook for about 2 minutes until softened but not browned.

Stir in the Arborio rice and cook for about 3 minutes, stirring frequently. The grains should become lightly toasted and coated with the oil while remaining pale in color.

Step 3: Add the Wine and Saffron

Pour in the white wine and add the saffron threads. Stir constantly until the wine has been almost completely absorbed by the rice. The saffron will begin releasing its vibrant golden color and delicate floral aroma into the risotto.

Step 4: Slowly Add the Broth

Begin adding the hot broth about ½ cup at a time. Stir frequently and allow each addition to be nearly absorbed before adding more broth.

Continue this process until all of the broth has been incorporated. After about 12 minutes, begin tasting the rice regularly. The finished risotto should be creamy, with rice that is tender yet still slightly firm in the center. Total cooking time is typically 25 to 30 minutes.

Step 5: Finish the Risotto

Season the risotto with the sea salt and black pepper.

Remove the pan from the heat and immediately stir in the butter until completely melted. Add the grated Parmigiano-Reggiano cheese and stir vigorously until the cheese has melted and the risotto becomes silky, rich, and creamy.

Step 6: Serve Immediately

Spoon the saffron risotto into warmed serving bowls or shallow soup plates. Garnish with additional freshly grated Parmigiano-Reggiano cheese, if desired, and serve immediately while hot and creamy.
