Step 3: Toast the Rice
Add the rice to the pot and stir until every grain is evenly coated with olive oil. Cook for about 5 minutes, stirring constantly.
The edges of the rice should begin to look translucent while the centers remain opaque. Toasting the rice develops its flavor and helps the grains retain their structure during cooking.
Step 4: Add the Champagne

Notes

Chive blossoms have a delicate onion flavor that complements the creamy risotto. Separate the flower heads into small florets rather than placing whole blossoms on each serving.
Acquerello and Arborio are both suitable for risotto. Acquerello rice maintains its texture especially well during cooking, while Arborio is widely available and releases plenty of starch.
Always use a dry Champagne or Brut sparkling wine. Sweet sparkling wine may make the finished risotto taste unbalanced.
Dry Prosecco or Cava may be substituted for Champagne when necessary.
