1 gluten-free pizza crust, homemade or store-bought (12 to 16 inches)
1 tablespoon olive oil, divided
2 large yellow onions, thinly sliced
1 teaspoon granulated sugar
½ teaspoon sea salt, divided
¼ teaspoon black pepper, divided
8 ounces sirloin steak or ribeye steak
1 teaspoon garlic powder
1 cup shredded Fontina cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon fresh thyme leaves
1 tablespoon chopped fresh parsley
1 teaspoon balsamic glaze, optional
Crushed red pepper flakes, optional

Directions

Step 1: Caramelize the Onions

Heat 2 teaspoons of olive oil in a large skillet over medium-low heat. Add the sliced onions, sugar, and ¼ teaspoon salt. Cook slowly for 20 to 25 minutes, stirring frequently, until the onions become deep golden brown and wonderfully sweet. Add the minced garlic during the final minute of cooking. Remove from the heat.

Step 2: Prepare the Steak

Pat the steak dry with paper towels. Brush with the remaining olive oil and season with the remaining salt, pepper, and garlic powder. Heat a cast iron skillet over medium-high heat. Cook the steak for approximately 3 to 4 minutes per side for medium-rare or until it reaches your preferred level of doneness. Allow the steak to rest for 5 minutes before slicing it into thin strips.

Step 3: Prepare the Pizza

Preheat the oven to 450°F. If using a pizza stone, allow it to preheat with the oven for at least 30 minutes.

Place the gluten-free pizza crust onto a pizza peel or baking sheet lined with parchment paper if needed.

Step 4: Assemble the Pizza

Evenly distribute the shredded Fontina and mozzarella cheeses over the crust, leaving a small border around the edge. Arrange the caramelized onions over the cheese, followed by the sliced steak. Sprinkle with Parmesan cheese and fresh thyme.

Step 5: Bake the Pizza

Bake for 12 to 18 minutes, depending on the thickness of the crust, until the cheese is bubbling and lightly browned and the crust is crisp.

Step 6: Finish and Serve

Remove the pizza from the oven and allow it to cool for 2 to 3 minutes. Garnish with fresh parsley and drizzle lightly with balsamic glaze if desired. Sprinkle with crushed red pepper flakes for a little heat. Slice and serve immediately while the cheese is hot and melty.

Notes

For the most tender steak, slice it thinly across the grain after resting.

Fontina melts beautifully and creates an exceptionally creamy texture, but Gruyère or provolone may also be substituted.

A homemade gluten-free pizza crust produces outstanding flavor, but a high-quality store-bought crust makes this recipe quick and convenient.

For additional richness, add sautéed mushrooms or roasted garlic before baking.

Use a pizza stone whenever possible to achieve the crispiest gluten-free crust.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F oven until warmed through and the crust becomes crisp again.
